Simple Homemade Pumpkin Soup from the Garden

This recipe celebrates the fresh, earthy flavor of homegrown pumpkin with a creamy, rich finish. It’s incredibly simple and comforting.

Ingredients:

  • Pumpkin (fresh from your garden)
  • Garlic
  • Salt, to taste
  • Pepper, to taste
  • Coconut milk
  • NestlĂ© cream (or a similar brand of cream)
  • Cooked eggs, for serving

Instructions:

  1. Prepare the Pumpkin: Cut the pumpkin into manageable pieces, then peel off the skin. Remove the seeds and stringy bits from the center. Chop the pumpkin flesh into cubes.
  2. Boil the Pumpkin: Place the chopped pumpkin into a large pot and cover it with water. Bring the water to a boil, then reduce the heat and let it simmer until the pumpkin is very tender and easily pierced with a fork.
  3. Add Flavor: While the pumpkin is simmering, add your desired amount of garlic, salt, and pepper to the pot.
  4. Mash and Combine: Once the pumpkin is cooked, carefully transfer the pumpkin pieces and a small amount of the cooking liquid into a bowl. Use a masher or a fork to smash the pumpkin into a coarse puree. You can also use a blender for a smoother consistency.
  5. Create the Soup Base: Return the mashed pumpkin mixture to the pot.
  6. Add Creaminess: Stir in the coconut milk and NestlĂ© cream. Mix well until everything is combined and the soup has a smooth, creamy texture.
